VILLA CORNIOLE | WINERY Teroldego | Rotaliano Trentino 2017

Trentino - TEROLDEGO ROTALIANO DOC Rotaliano DOC Grapes: Teroldego 100% (a Trentino autochthonous grape variety). Vineyard location: the vineyards are located in the Rotaliana plateau, within the borough of Mezzolombardo where the soil is particularly suited fo this type of grape, not surprisingly considered, the Prince variety of Trentino. Soil type: alluvial landfill, highly fertile topsoil, excellent drainage. Vinification: the grapes are handpicked, then selected and vinified in stainless steel tanks. The fermentation takes place with an 8-15 days maceration on the skins at a controlled temperature of 26/28 degrees. The wine ages in stainless steel and a small percentage in barriques. It ages for a further few months in the bottle To be served at: 18-20° C. Food Pairing: the ideal match for this wine are the typical dishes from Trentino cuisine, rich and sapid, but also goes well with lasagna, roasted and grilled meat and aged cheeses.

VILLA CORNIOLE | WINERY Pinot Grigio Ramato | Dolomiti Trentino 2017

Trentino - PINOT GRIGIO RAMATO PIETRAMONTIS Dolomiti IGT Grapes: Pinot Grigio 100%. Vineyard location: Piana Rotaliana. Soil type: alluvial landfill, highly fertile topsoil, excellent drainage. Vinification: manual grape selection and harvesting, then de-stemming. Cold maceration for some hours and pressing. Fermentation at a controlled temperature partly in steel and partly in wooden vats, where the wine is aged for about one year. Then, further aging in the bottle. Characteristics: coppery onion skin color. Warm, with sweet fruityflowery hints and light vanilla notes on the nose. Rich and full with a structured soft taste. To be served at: 10-12° C. Food Pairing: not only good as an aperitif. This wine enhances and brings a note of sweetness to strong first courses or white meat dishes, shellfish, mollusks and raw fish. Also good with young fresh cheeses.
