Pannonhalma Tricollis white 2021

Tricollis is a flagship wine representing the characteristics of the Pannonhalma wine region and bearing the marks of the winemaker's philosophy of the Pannonhalma Archabbey.
The blend is made from the three typical, historical and traditional grape varieties of the district, namely Riesling, Olaszrizling and Gewürztraminer, enriched with a hint of Pinot Blanc.
The harvested grapes are first destemmed and selected by an optical sorting machine and then they are crushed and pressed except Gewürztraminer that has a one-day-long cold maceration before being pressed. Following settling and clearing the juices are fermented by specific yeast cultures under controlled temperature conditions. The rapid, oxygen-free processing technology makes it possible to transfer the primary characteristics of the grape juices into the wine.
Due to its strict technological processing, this wine delivers the fresh and crispy flavours of early summer fruits with its floral and pleasant aromas during its first months after bottling while exhibits the deeper character of the Riesling varieties for the following months and years.

Pannonhalma Tricollis rosé 2021

This fresh rosé is coming from a cool vintage. Its smooth and fruity notes are derived from the merlot-cabernet grapes, while its essential crispness is guaranteed by pinot noir and kékfrankos. This wine is a clear and vibrant freshener with a wide scale of aromas and a long finish due to the ripe grapes.
The pinot noir and kékfrankos parts were harvested intentionally with a low potential alcohol for the rosé wine. The juice of merlot and cabernet franc grapes was gained by the “saignée” method. The must was fermented on low temperature in stainless steel tanks. Its pleasant fruitiness is well-balanced with a hint of residual sugar.

Pannonhalma Tricollis red 2020

Tricollis is a ruby coloured mellow red wine, where pinot noir and merlot are dominant, completed gently with cabernet franc. Notes of cherry and red-currant on the nose are enriched by the fine cinnamon spices due to the aging in small barrels. Soft tannins make the blend medium-bodied and keep it nice and easy-drinking.
The wine is fermented in 60 hl stainless steel tanks, keeping the juice on the skin for three weeks. Following pressing, malo-lactic fermentation and aging for 6 months after that take place in 228 litre used barrels.

Pannonhalma Hemina white 2020

Hemina is the Burgundian style white wine of Pannonhalma Archabbey that is composed of grape varieties according to the conditions of each vintage. The wine of the recent vintage is based on chardonnay and pinot blanc that ensure the full body and the creamy structure, ornamented with the calcareous minerality and the delicate notes from the aging in used barrels and enriched by the lively fruitiness of viognier and the vivid acidity of sauvignon blanc. It is a complex and rich wine that can even develop with bottle aging.
The biologically ripe grapes of the different varieties were harvested separately. After destemming the grapes the berries were first selected by an optical sorting machine and then pressed, the cleared juice was put into 500 litre Hungarian oak barrels for the fermentation. Also the malo-lactic fermentation took place in the barrels and we have been stirring up the fine lees regularly for 6 months to increase the complexity of the wine and to enrich its aromas.

Pannonhalma Hemina red 2020

Hemina the premium red blend of Pannonhalma Archabbey. A pleasant drink for the sake of the wine but also a good companion for bistro food.
Owing to the dominancy of merlot, the wine has silky tannins, while the notes of cabernet franc ensure the structure for the wine. Due to the short period of aging in used Hungarian wooden barrels, the leading aromas are driven by the fruitiness but not from the barriques. The alcohol content is balanced with the richness and the body, emphasizing the notes of black berries both on the nose and the palate. It is a delicate and elegant Bordeaux-style blend from Pannonhalma.
The grape varieties were harvested separately. After being destemmed and selected by the optical sorting machine, the grapes were cold-macerated in 60 hl chilled stainless steel tanks and then fermented under controlled conditions. The fermented wine has been aged for a short time, only for 8 months in used Hungarian wooden barrels. During that time, the malo-lactic fermentation has been completed.

Pannonhalma Sauvignon Blanc 2021

The grape variety is considered a newcomer in the wine region of Pannonhalma but its wine is an authentic representation of the district's specific terroirs and the winemaker's approach to this global grape.
The crop of the two vineyards Széldomb and Tavaszó that bear diverse soil and microclimatic characteristic was harvested in different phase of biological ripeness. Due to the timely and carefully applied technology in the winery, a tasty and crispy white wine with the typical notes of the grape variety was produced that, at the same time, authentically represents the natural conditions of Pannonhalma. The aromatics of the wine are dominated by hay, gooseberry and green apple, enriched by a sweet tinge of elder flower on the finish.
Directly after harvesting the grapes they were first destemmed and optically sorted that was followed by a skin contact for 14 hours on a very low temperature of 7°C. After being smoothly pressed, the cleared juice was fermented in stainless steel tank, partly on the skin. The wine was kept on the fine lees for two months.

Pannonhalma Rajnai Rizling 2021

Rheinriesling is a really typical grape variety of the Pannonhalma wine region that also covers the biggest part of the vineyards of the Pannonhalma Archabbey. This wine is defined by the freshness with a dominance of mint leaves and a smooth touch of grape blossoms on the nose, while it is driven by citric aromas ranging from grapefruit to lime on the palate. The slightly full-bodied but still intense and fresh wine has high bottle-aging potential; at the present time, it is a lovely fresh summer wine with the true Riesling structure which will develop and guarantee its quality in the future. It shows the feature that made it one of the most well-known and popular grape varieties of the region.
Directly after harvesting the grapes they were first destemmed and selected by an optical sorting machine and then smoothly pressed. The settled juice was fermented in stainless steel tanks on a temperature of 12-18°C. It was aged in stainless steel tanks until bottling.

Pannonhalma Pinot Noir 2020

Matching the styles of the old and the new worlds!
Regarding pinot noir, Pannonhalma Archabbes cultivates four Burgundian clones in three vineyards. The manifold soil and microclimatic facilities of the Pannonhalma wine region offer a unique potential to apply traditional technology combined with modern, new world approach.
The wine is characterized by typical aromas of the variety on the nose. It reveals the full scale of red berries of the early summer from the ripe raspberry up to the black cherry. These notes are enriched by the spiciness coming from the aging in wooden barrels. On the palate plenty of ripe fruity aromas guarantee an unforgettable joy of drinking.
After harvesting and destemming, the pinot noir grapes have been cold-macerated for 6 days in 60 hl chilled stainless steel tanks. Following this process, the fermentation took place on 25-26°C. The fermented wine has been aged for 10 months partly in new wood and secondly-used barriques.

Pannonhalma Prior white 2020

The grape variety rheinriesling is harvested in several stages on the vineyards of the Pannonhalma Archabbey. The most precious crop of the vintage from the single vineyard was handled separately. Following destemming and selecting the grapes by an optical sorting machine, the pressed juice was settled and then slowly cold-fermented in stainless steel tanks and finally kept on the fine lees for a long time. The wine was bottled in May 2021.
A wine of uncommon purity, this flagship riesling selection is introduced by the citrus aromas that are very characteristic of the variety, embodied in Mediterranean notes of tangerine and ripe orange rather than the greenish tones that the variety often produces in northern growing locations. Crystalline and pristine, the wine relies on a broad rather than sharp acid foundation – a token for serious cellaring potential and the endurance of minty fruit flavours. The solid acid backbone attains a superb balance with a hint of residual sugar.

Pannonhalma Infusio 2019

Infusio is the superior red wine of Pannonhalma in Bordeaux style.
Made from merlot and cabernet franc, the most prestigious blend of Abbey Winery Pannonhalma comes from the hottest vineyard. Ripe bramble and cranberry simultaneously appear on the nose, completed by the aroma of vanilla coming from the wooden barrels. The balance of extract sweetness, alcohol and mature tannins results in a mellow taste evoking the concentrated notes of dried sour-cherry and plum as well as coffee and chocolate. It is a serious and elegant wine with Mediterranean notes and a high aging potential.
A wine truly devoted to festive occasions…
After being destemmed, the grapes were fermented in 60 hl stainless steel tanks. The fermentation took place on a temperature of 30-32°C during the first 10 days of the long skin contact. The wine was aged in new and secondly used mostly Hungarian and in a tiny part American 228-litre-barrels for 19 months.

Soon after building a church and monastery on the Sacred Mount of Pannonia in 996, the Benedictine monks revived the viticulture and wine-making tradition once pursued by the Romans but long fallen into oblivion.


1000 years at present

The Benedictine monks who settled on the Sacred Mount of Pannonia in 996 have always been closely connected with the viticulture introduced by the Romans. For centuries, they have applied the highest prevailing standards of wine growing and vinification. At the beginning of the 1900’s, the Abbey held about 100 hectares of vineyards in the direct vicinity of Pannonhalma, and it also owned plantations on the Somló Hill and in Tokaj. Its bottled wines, both white and red, were sold in Hungary as well as abroad far beyond the borders of what was then Greater Hungary.

The political and social upheaval that followed World War II put an end to the centuries-old tradition when the single-party state confiscated the Abbey's vineyard holdings and winery. During the decades that followed, the monks never gave up hopes of reviving the legacy of excellence one day. Finally, 10 years after the collapse of Communist rule, plans for rebirth took shape. As a result, a new winery with a floor space of 2000 m² and a storage capacity of 3000 hectolitres was established in 2003. The Pannonhalma Archabbey, since 1996 part of UNESCO World Heritage, is the majority owner, in partnership with the MKB Bank.


Historic vineyards replanted

The vineyards of the Pannonhalma Archabbey are situated in the officially designated wine region of Pannonhalma which, with a total area of about 600 hectares, is one of the smallest of the 22 historic wine regions of Hungary. The weather conditions are balanced with average sunshine hours and heat, and higher than average precipitation. Most of the vines are grown on brown forest soils that formed on loess and sand. Consistently from vineyard to vineyard and in all vertical intervals, the soils are alkaline owing to the presence of lime.

The winery cultivates about 50 hectares divided among four major vineyards, each of which used to belong to the Abbey in the historic past. The new vines planted under a program started in 2001 are spaced at a distance of 2.4 x 0.8 m; the training system is Guyot. The goal was to achieve a planting density of over 5000 vines per hectare in order to significantly cut the yield per wine to harvest much better quality fruit. In our choice of cultivation techniques, we strive to keep an optimal balance between modern mechanization and fastidious manual labour.


Grape varieties – indigenous locals and traditional internationals

Since the natural conditions of Pannonhalma closely resemble those of the upper Loire Valley and Alsace, two-thirds of our vineyards are planted by grape varieties that make crisp, easy-drinking white wines of fine quality. This is the style of wine we seek to produce mainly from Rheinriesling, Sauvignon Blanc, and Gewürztraminer.

In designing the composition of our vineyards, we have made it a point to uphold local and historic traditions by making room for Welshriesling, a native Hungarian variety as well as for Királyleányka, originally from Transylvania, the historic part of Hungary.

With visitors arriving from all corners of the world, we devoted one third of our acreage to popular international varieties that have shown good promise for the long term, such as Chardonnay, Pinot Blanc, Pinot Noir, Merlot, and Cabernet Franc. Among the red grapes, we give a prominent role to Pinot Noir as being ideally suited to the local climate and soils, and therefore uniquely capable of expressing the potential of Pannonhalma as a red wine producing district.


Through the lens of the winemaker

This roughly 50-hectare property, with four vineyards displaying pronounced differences in soils from loess to clay to limestone, offers me an unrivalled opportunity. The diversity of climatic conditions, along with the training system and varietal composition, both carefully chosen to suit those conditions, gives me excellent quality fruit to work with toward colourful wines of good concentration and firm varietal character.

The technologies adopted at our gravitational winery enable us to preserve the original distinctive qualities of the grapes in the finished wine. The machinery and equipment we use provide reliable support for a wide range of oenological operations, from the making of crisp and vigorous whites in stainless steel to crafting full-bodied, meaty, ambitious whites from our finest sites that are both fermented and matured in 500-liter casks. For vinifying red grapes, we have stainless steel tanks for cold fermentation at our disposal. Gentle processing methods help us preserve authentic berry fruit aromas intact, resulting in truly characterful red wines aged in small barrels.

My personal goal as winemaker is, first and foremost, to craft crisp, fruity, and concentrated whites from the varieties that are most seminal for us, namely Riesling, Gewürztraminer, and Sauvignon Blanc. In terms of the reds, I place the emphasis on expressing the distinctive character of the Pinot Noir grape through exploring various options in sites, clones, and methods of vinification and maturation.

I believe that the constellation of unique conditions and unusual technologies can be successfully conveyed in a wine aged to perfection in the bottle, augmenting the thousand-year-old fame of the Pannonhalma wine region.

State-of-art cellar and technology

The grapes are processed in the new facility and cellar occupying nearly 2000 square meters at the bottom of the south-eastern slope of Saint Martin’s Hill, directly adjacent to the monastery itself. The building complex has been designed to blend in with its natural environment by taking advantage of the configurations of the terrain.

At the suggestion of our consultant Tibor Gál, the internationally renowned winemaker from Eger, who perished in a tragic car accident in February 2005, we conceived the cellar structure and equipment around an envisioned technology that would help maximize the potential of the varieties we work with. Key to this concept is the four-story winery building, which is inherently well-suited to moving the fruit by the force of gravity.

Depending on the processing technology, which in turn is determined by the given grape variety and the targeted wine style, the must of the white grapes is delivered to temperature-controlled stainless steel fermentation tanks or wooden casks, while the reds are fermented in steel. Maturation takes place in wooden casks stored in cellar wings that reach deep into the hill. In 2008, we expanded the winery by a new building that provides storage for 200.000 bottles and incorporates a new cellar wing for fermenting and maturing full-bodied white wines in wood.

Based on a wide spectrum of flexible tools, the cellar technology available to us supplies a solid foundation on which we can build wines that are new in style yet faithful to the deep core of tradition in Pannonhalma.


Discover the estate …

As a winery open to visitors, our facility is optimally equipped to afford a glimpse of the winemaker’s work and more than a taste of our wines. Taking a professionally guided tour, visitors can familiarize themselves with the history of Benedictine viticulture, view the building complex, follow through winemaking processes, and taste the wines in a tasting room furnished in the classic cellar wing, which seats nearly 50 people comfortably.

Our Tasting Terrace, open daily weather permitting from the beginning of May to the end of August, and on weekends in September, commands magnificent views of the monastery’s lavender fields and vistas far into the east. The Terrace extends the opportunity of tasting our current release wines to those who do not wish to take the cellar tour or are simply looking to spend a pleasant afternoon in these surroundings of unequalled beauty.

As a supplement to our wine-related attractions, we also host periodic jazz and folk music concerts and other cultural events for a truly unforgettable visit.

In accordance with the natural conditions and the grape varieties used, our assortment includes fresh, fragrant, fruity white and rosé wines made by reductive technology, as well as full-bodied white and spicy, characterful red wines aged traditionally in wood.

Without exception, our pure varietal wines are powerfully marked by the terroir. This gives them a specific fascination among the world’s wines made from international varieties. We are also proud to offer a selection of distinctive blends that faithfully reflect the personality and spirit of our winery.
