Marlborough - Aroma - Ripe dark and red cherry, brambly fruits, spice and leather, with a hint of smoky oak. Palate - A full-bodied wine with round, mouth-filling flavours of plum, brambly fruit, dark cherry and a hint of savoury herbs. The oak integrates nicely with the fruit and the silky and linear tannin structure.

Marlborough - Aroma - Some ripe melon and dried stone fruits with vanilla and butter notes and a subtle mealiness. Palate - A wine of very elegant texture with stone fruit, vanilla creaminess, pleasing weight and a long, dry and mineral finish.

Ausbau
The fruit was hand-picked and whole-bunch pressed. Only the free-run juice was used, and this was fermented in French oak puncheons and barriques, using both select and wild yeast. Frequent bâtonnage, full malolactic fermentation and ten months’ barrel maturation have added to the texture and complexity. This wine is unfined.

Astrolabe Kekerengu Coast Sauvignon Blanc 2018

Marlborough - Aroma - Citrus pith, lime and grapefruit zest and hints of jasmine tea, fennel and basil. Palate - A medium-bodied wine with flinty, almost salty notes, passion fruit flavours and a dry finish.

Ausbau
Grapes were machine harvested in cool conditions, de-stemmed and lightly pressed with minimal skin contact. Clear juice was tank-fermented at low temperature using neutral yeast strains to allow the powerful fruit flavours to dominate. I blended in a sixteen percent portion of whole bunch pressed, high solids, and wild yeast barrel ferment to add subtle texture and complexity. Bottled 5 December 2018. We made three thousand, six hundred and twenty-two bottles.

Ausbau
Only the highest quality fraction of free-run juice has been used in this pinot gris, with most from whole-cluster pressed hand-picked bunches. This portion has been cool-fermented on light grape solids to add some round texture and flavour complexity. The balance of the wine is from night-time machine harvesting, where clear-settled juice has been fermented at low temperature to enhance aromatic intensity.
