Variety Composition
Sauvignon Blanc 50% / Asyrtiko 50%

Wine Making
Varieties are harvested within a 20-25 day period from one another. Sauvignon Blanc is harvested first, with Asyrtiko, this highly acid and explosive variety, following. After removing all damaged grapes or foreign materials at the grape selection belt, each variety goes through a cold soak process at 2°C for approximately 36 hours, followed by the alcoholic fermentation process at a controlled temperature of 14°C. The wine remains on its fine less in the wine-making vats for about 2-3 months, to get a richer mouth feel, enhancing the aftertaste duration and the natural aromas of the varieties.
 
Wine Characteristics
A bright, crystal-clear color with soft golden reflections. Intense and complex nose with tropical and citrus fruit scents. Balanced and full mouth, with a pleasant aromatic duration that captures the nose.

Serving Recommendations
The aromatic richness and freshness of this wine is best developed at 8-10°C.

Enjoy this wine coupled with rich risottos, fat fish, turkey stuffed with resins, pork with celery and mature creamy cheese.

Grenache Rouge 85% / Cabernet Sauvignon 15%

 Wine Making
Grenache Rouge is a variety with medium acidity, but excellent fruity taste and aromatic intensity. Grapes are harvested in early September because this variety loves heat and can tolerate dry weather, with Cabernet Sauvignon, this dynamic variety, following suit. After the grape selection belt, grapes are channeled into vats and go through a cold soak process at 2°C for 18 hours. Then the saignée method is applied to the wine production process and alcoholic fermentation takes place at a stable and controlled temperature of 14°C.

Wine Characteristics
Fegites Rosé is a spicy and different rosé wine, which stands out amongst most wines belonging to this category. With a light salmon pink color and purple reflections, it has a nose of intense rose aromas with wild flower notes, a mouth with fine acidity and an aftertaste of white-fleshed peach. Fegites Rosé Label will certainly satisfy wine lovers and give them the opportunity to taste an original and very special wine. Its blend and style stirs the interest and awakens the senses, promising many new and interesting wine experiences.

Serving Recommendations
Served at 8-10°C. Pairs well with red sauce pasta, charcoal-grilled fish and poultry.

Wine Making
Harvesting begins at dawn, when grapes are in the best and most dynamic condition and have not yet been affected by the heat of the sun. This retains the aromatic and phenolic elements of each variety. Then the typical red wine making process takes place under controlled temperature. Following the procedure into French oak barrels and remains there for 12 months. Then the wine is bottled and left to mature for another 12 months.

Wine Characteristics
A gleaming purple red color with violet reflections. Nose of fresh red and black fruit aromas with discrete mineral notes.

Fully bodied and balanced wine with silky tannins. Long, velvety aftertaste with powerful dried plum and vanilla flavors. Taste, which is equally robust and well structured. Pay attention to the tannins and the fine way they are blended in.

Serving Recommendations
Ideal serving temperature at 17-18°C. Best accompanied by meat cooked with spicy sauces, game and yellow cheese.

A wine with a long ageing potential.

THE WINERY
A large 4,000 sq m castle-house, inspired architecturally by the Old Macedonian Mansions, is our place. It is located between Doxato and the Adriani of the Prefecture of Drama. Five buildings united, structured in three levels.

The ground floor functions as a production-bottling and storage space. It is structured to facilitate the works of the winery and is fully equipped with the most modern winemaking tools: sorting carpet, excavator, pneumatic press, stainless pre-cryogenic extraction tanks for white and rosé wines, stainless fermentation tanks and stabilization with controlled system Cooling. A total of 42 tanks totaling 400,000 liters with a maximum production of 250,000 liters of wine per year. As a natural continuity of the tank space, the bottling area is independent. The automatic bottling machine includes a bottle washing system, filling with ready-made wine and natural cork placement. The bottles are placed in large pallets in the storage area.

A few days later, they are led to the capsule placement and tagging machine in the bottles, packed in paper crates and kept at a controlled temperature until the time they were transported.

In the basement there are the wine-growing areas divided into two sections.

In the first one there is the aging area in oak barrels. Each liter of 225 liters gives the red and some white wines the beneficial properties of wood. Ideal aging conditions with stable temperature and humidity prevail in the room.

A little further outside was the Winegrowing area with a view of the collection of collectible bottles. It has an audiovisual system and features of modern technology. The visitor is informed about the entire life of a bottle from birth to the time of its consumption. A small but interesting venue for conferences and similar events.

In the second section are the cellars. Small wine-cellars with shelves of approximately 25 bottles to keep private collections.

The gastronomy hall under construction will shed light on the philosophy of the Estate, validating the delicious balance of wine and food. On the first floor, with its impressive sheds, is the multipurpose hall. Fully organised to host major human moments, events of scientific interest and banquets.
