Dominio de Fontana Blanco 2014

Produced exclusively from selected parcels in our 400-ha-Dominio de Fontana-estate, in Uclés (Castile, Spain). The high-altitude vineyards are sustainably farmed, with no use of pesticides and minimal treatments. Each variety is carefully adapted to the different soils and growing conditions of the estate and each vineyard is managed independently to achieve perfectly balanced vines, capable of expressing both the character of the variety and estate. Both varieties are picked and fermented separately in stainless steel at around 16ºC. The two varieties are blended each year in varying proportions to achieve an intriguing combination of the more full-bodied, intense Sauvignon Blanc with a fresher, more austere Verdejo. After blending, the wine remains on its fine lees for a minimum of 3 months after bottling for a rounder, fuller mouthfeel. Intriguing combination of the more full-bodied, intense Sauvignon Blanc with a fresher, more austere Verdejo.

A fresh, aromatic white wine showing the intensity of fruit, precision of aromas and freshness of the high-altitude Dominio de Fontana Estate. Pale green-yellow with intense and expressive aromas, combining grassy and gooseberry notes of the Sauvignon Blanc with touches of fennel and white pepper from the Verdejo grape. Concentrated and textured on the palate, with depth, excellent freshness and a persistent, mineral finish. Ideal as an aperitif, with fish and light summer dishes, but also with pasta and white meat.

Dominio de Fontana Crianza 2012

Produced exclusively from selected parcels in our 400-ha-Dominio de Fontana-estate, in Uclés (Castile, Spain). The high-altitude vineyards are sustainably farmed, with no use of pesticides and minimal treatments. Each variety is carefully adapted to the different soils and growing conditions of the estate and each vineyard is managed independently to achieve perfectly balanced vines, capable of expressing both the character of the variety and estate. Both varieties are picked, destalked and fermented separately in stainless steel at around 24ºC. Maceration times and extraction regimes are decided upon by tasting, tank by tank individually. The wines undergo full malolactic fermentation. 100 % of the wine is aged for around 12 months in new and semi-new oak barrels combining American and French oak. The two varieties are blended each year in varying proportions to achieve an intriguing combination of the fresh, elegant Tempranillo with the more muscular Cabernet Sauvignon.

An elegant and sophisticated wine showing the intensity of fruit, purity of aromas and freshness of the high-altitude Dominio de Fontana Estate. Deep garnet colour, with powerful and complex aromas combining the ripe berry notes of the Tempranillo with the cassis and touch of bell pepper from the Cabernet Sauvignon. The wine was aged for 12 months in barriques of American and French oak, acquiring a bouquet, with hints of leather, spice and vanilla. Very round on the palate with a velvety texture, but with remarkable freshness and great persistence. Ideal with roasted lamb, steak, mature cheeses and rich casseroles.

Dominio de Fontana Roble 2014

The high-altitude vineyards are sustainably farmed, with no use of pesticides and minimal treatments. Each variety is carefully adapted to the different soils and growing conditions of the estate and each vineyard is managed independently to achieve perfectly balanced vines, capable of expressing both the character of the variety and estate. Both varieties are picked, destalked and fermented separately in stainless steel at around 24ºC. Maceration times and extraction regimes are decided upon by tasting, tank by tank individually. The wines undergo full malolactic fermentation. 30%-50% of the wine is aged combining American oak barrels and oak alternatives. The two varieties are blended each year in varying proportions to achieve an intriguing combination of the fresh, fruity Tempranillo with the fuller-bodied spicy Syrah.

A rich, juicy red wine showing the intensity of fruit, purity of aromas and freshness of the high-altitude Dominio de Fontana Estate. Deep ruby with powerful and expressive aromas, combining the ripe berry notes of the Tempranillo with touches of pepper from the Syrah grape. The wine was aged for four months in American oak, acquiring complexity with elegant, spicy notes of clove and a touch of vanilla. Concentrated and full bodied on the palate, with remarkable freshness and length. Ideal with cheeses, ham, sausages, roasted meat, barbeque and pasta.

Dominio de Fontana Vendimia Seleccionada 2012

The wines undergo full malolactic fermentation. 100 % of the wine is aged for around 18 months in new and semi-new oak barrels combining American and French oak. The two varieties are blended each year in varying proportions to achieve an intriguing combination of the fresh, elegant Tempranillo with the more powerful, floral Graciano.

Deep garnet colour, with powerful and complex aromas combining the ripe berry notes of the Tempranillo with the floral, blueberry notes of the Graciano. The wine was aged for 18 months in barriques of American and French oak, acquiring an intriguing bouquet with touches of spice and vanilla. Very round on the palate with a velvety texture, remarkable freshness and great persistence. Elegant red wine of great gastronomic versatility, ideal with grilled or roasted meats or as a meditation wine.

Mesta Rosé Organic 2015

The Mesta was a powerful alliance of sheep ranchers in medieval Castile, who controlled the “cañadas”: traditional rights-of-way for migrating sheep. To this day, the “cañadas” are protected from being blocked or built upon. Our vineyards are nestled deep in the land of the Mesta, and are still passed over by flocks on their annual migration – an authentic reminder of ancient rights and a cultural cue for continuing co-existence with nature. Trough sustainable viticulture and respectful winemaking, we produce wines of great purity, reflecting the unique personality of our land.

Produced from our own, sustainably farmed vineyards in Uclés (Castile, Spain). Managed as an integrated ecosystem and studded with centenary oak trees. The continental climate with sunny days and cool nights allow us to achieve intense fruit and excellent varietal definition, while retaining remarkable freshness. Grapes are picked at night or in the early morning hours and shipped quickly to our state-of-the-art winery for destalking, light crushing and vatting in stainless steel tanks. Short maceration of 8 hours on skins, before racking and addition of 30 % saignée juice. Alcoholic fermentation around 14ºC, stopped by chilling when the wine reaches a perfect balance of fruit concentration, acidity and slight residual sweetness.

An approachable but serious rosé wine, displaying great purity and typicity for the noble Tempranillo grape, in a lighter, more elegant style than most Spanish rosés. Pale strawberry colour, with intense and fresh berry aromas over subtle floral notes. Excellent concentration and a slightly off-dry finish, beautifully balanced by crisp acidity and a refreshing, savoury note. A perfect summer drink and a highly versatile food wine with pasta, rice dishes, vegetables and curries as well as stir-fried, spicier dishes.

Our vineyards are nestled deep in the land of the Mesta, and are still passed over by flocks on their annual migration – an authentic reminder of ancient rights and a cultural cue for continuing co-existence with nature. Trough organic viticulture and respectful winemaking, we produce wines of great purity, reflecting the unique personality of our land.

Produced from our own, organically farmed vineyards in Uclés (Castile, Spain). Managed as an integrated ecosystem and studded with centenary oak trees. The continental climate with sunny days and cool nights allow us to achieve intense fruit and excellent varietal definition, while retaining remarkable freshness. Grapes are picked at night or in the early morning hours and shipped quickly to our state-of-the-art winery for destalking, light crushing and fermentation under temperature control in stainless steel. Maceration lasts for 8-10 days to achieve a perfectly balanced style without excessive extraction. No oak is used to achieve a pure expression of high-altitude Tempranillo.

A vibrant and juicy, unoaked red wine showing great purity and the typicity of high altitude Tempranillo, with expressive and well-defined aromas of red berries, rosemary and a touch of liquorice. Bright ruby red, fresh and with excellent persistence on the palate, with round texture and satisfyingly dry finish. Very versatile, medium bodied food wine, excellent for example with tapas, grilled meat, sausages and pasta.

Our vineyards are nestled deep in the land of the Mesta, and are still passed over by flocks on their annual migration – an authentic reminder of ancient rights and a cultural cue for continuing co-existence with nature. Trough organic viticulture and respectful winemaking, we produce wines of great purity, reflecting the unique personality of our land.

Produced from our own, organically farmed vineyards in Uclés (Castile, Spain). Managed as an integrated ecosystem and studded with centenary oak trees. The continental climate with sunny days and cool nights allow us to achieve intense fruit and excellent varietal definition, while retaining remarkable freshness. Grapes are picked at night or in the early morning hours and shipped quickly to our state-of-the-art winery for a short prefermentative cold maceration, followed by pneumatic pressing and fermentation in stainless steel at around 16ºC to preserve fruit character without producing excessive secondary aromas. Malolactic fermentation is prevented by chilling. Wines remain on their fine lees for a minimum of 3 months before bottling.

A crisp, aromatic white wine, showing great purity of aromas and a precise expression of the Verdejo grape. Bright, pale straw yellow, with intense, fresh notes of grass, fennel and white pepper. Dry and refreshing on the palate, with excellent balance, a moderate alcohol of only 12% a persistent, slightly mineral finish. Excellent as an aperitif and with pasta, salads, poultry and fish dishes.
